Mom's Cream of Tomato Soup
2 1/2 C tomato juice
3/4 tsp. baking soda
2 1/2 C milk
Hat tomato juice to a boil. Put in soda, will foam at first. Put in milk. Heat but don't boil. Add about 1 1/2 tsp. butter.

Artichoke Soup
1 medium onion
2 T butter
2 T flour
2 C chicken broth
1 14 oz cans evaporated milk
1/4 C parsley
salt & peppper.
Saute onion in butter, add flour and cook 2 minutes, stirring constantly. Add chicken broth & artichokes. Cook on medium heat until thickened, stirring constantly. Add milk. Cook 5 minutes until heated.

Excellent Chili
3 lbs good boneless beef stew meat
6 oz shortening or oil
3 or 4 garlic cloves, crushed
2 t. salt
1 t black pepper
2-6 T chili powder, to taste
1 t cumin
8 T masa harina
6 C hot water
1 large onion, coarsely chopped
4 T vinegar, or to taste
2 cubes beef boullion
1 t oregano
Remove most of fat from meat, cut into 1/2 or smaller cubes. Place shortening in large skillet til melted. Saute meat in fat until lightly browned. Add garlic, salt, pepper, cumin and chili powder. mix well and let seasonings permeate meat a few minutes.
Sprinkle in masa harina and mix, stirring rapidly. Place mixture in crockpot.
Add water, vinegar, boullion, onion and oregano. Cook on low until meat is very tender and falling apart. When done, skim off fat from surface.

Mom's Chili
Make a roux with 2 T flour and 2 T grease. Cook 2 lb ground beef until red disappears. Mix in 3 pods minced garlic, add 1 small bottle Mexene chili powder, paprika, 2 cups or more of water, cook slowly til done.

Nana's Oyster Stew
Melt stick of butter, and saute chopped onion & celery.
Put oysters in pan and cok on low just til they curl.
Add milk, salt & paprika
