Everyday Pimento Cheese


1/2 lb extra sharp vermont white cheddar
1/2 lb extra sharp new york (orange) cheddar
1 7 oz jar pimentos, drained and finely chopped.
1/2 t ground pepper
cayenne pepper to taste (may omit)
salt to taste
2/3 C mayonnaise

finely grate cheese into a large bowl. Using a fork, stir in pimentos & black pepper. Season with cayenne & salt. Stir in mayo, mashing with a fork until relatively smooth. Scrape spread into a crock or jar and chill at least 2 hours. Makes about 3 cups
